
Sweet Basil, Tomato and Goat Cheese Crustini
Ingredients
½ french baguette
2 tsp (10mL) butter or olive oil
4 oz (115g) goat cheese
6 leaves fresh chopped basil
2 medium ripened tomatoes, sliced (save two tomatoe slices for garnish)
Pinch coarse sea salt
Few turns of ground pepper
Directions
Preheat oven to 350ºF (180ºC). Line a baking sheet with parchment paper, split your baguette in half lengthwise. Brush bread with butter or olive oil, spread goat cheese evenly on the bread, top with basil and layer with the slices of tomato. Bake for 15 minutes; garnish with sea salt, ground pepper and a bit of chopped basil.
