Sweet Mustard Pickles
Ingredients
6 cucumbers, washed and sliced
6 onions, thinly sliced
¼ cup (50 mL) pickling salt
5 cups (1.25 L) sugar
1 cup (250 mL) all-purpose flour
4 cups (1 L) white vinegar
1 ½ tbsp (23 mL) dry mustard powder
1 ½ tsp (7 mL) turmeric
1 tsp (5 mL) celery seed
1 tsp (5 mL) mustard seed
Directions
Put cucumbers, onions, and pickling salt in a large pot. Let stand for 1 hour. Combine sugar, flour, vinegar, and spices in a bowl. Drain vegetable mixture and add sugar mixture to the pot; bring to a boil then reduce and cook until the mixture is thickened, approx. 35-40 minutes to an hour. Place in sterilized jars and preserve in a water bath.
