Traditional Molasses Cookies

Ingredients

1 ​cup (250 mL) shortening (butter can be substituted)
1 ​cup (250 mL) brown sugar
1 ​egg
1 ​cup (250 mL) molasses
1 ​cup (250 mL) boiling water with 2 tsp (10 mL) baking soda
1 ​tsp (5 mL) each ground cloves, ginger, cinnamon
1 ​tsp (5 mL) vanilla extract
½ ​tsp (2.5 mL) salt
4 ​cups (1 L) (approx.) flour

Directions

Mix shortening with sugar until creamy. Add egg. Mix well. Add molasses and hot water mixture. Mix well. Add spices, vanilla and salt. Mix well. Add flour, a little at a time, until mixture is thick enough to hold together. On a cookie sheet, drop dough by tablespoon leaving space between. Cook at 350°F (180°C) for 15-20 minutes. Makes approximately 4 dozen cookies.
