
Wild Blueberry Onion Chutney
Ingredients
1/4 lb (125 g) butter4 medium yellow onions (julienned)
1 cup (250 mL) wild blueberries (fresh or frozen)
1/2 cup (125 mL) maple syrup
1/2 bottle local craft beer
1/4 tsp (1 ml) salt
1/2 tsp (2 ml) pepper
Directions
In a medium to large frying pan, melt butter until it starts to brown; add onions and cook until translucent, about 3 to 4 minutes.
Add blueberries, maple syrup, beer, salt and pepper; bring to a boil then let reduce until as little liquid as possible remains without sticking to the pan, approximately 10 to 15 minutes.
Refrigerate until ready to serve. Makes 1½ cups (375 mL).
