Pho On The Go - Chantell Virtue (Summerside, PEI)
This Pho On The Go is a unique and creative dish that had all of our judges in agreement that Chantell deserved the grand prize. With a young family of four sons under the age of 10, the kitchen is where Chantell has always found her escape for some solitude and alone time. That has begun to change, as her boys are growing and are now joining her at the stove, a change that she is embracing.
Chantell says food represents life and vitality. “It is important to me to teach my children the life skill of cooking. I don’t want them to be the child at university who can only make instant noodles. Cooking also creates lasting memories. The quality time or the mere smell of a familiar dish can bring you back to your childhood.”
