Crystal green leaf lettuce salad
Ingredients
This salad features lettuce from Infarm, a vertical farming company with production facilities in select Sobeys stores across Canada. In this salad, the lettuce is the star!
3 heads of Crystal Green Leaf Lettuce, preferably from Infarm or a local vendor
2 medium sized carrots
1/3 English cucumber
¼ cup (50 mL) dried cranberries or pomegranate
1 lime
½ cup (125 mL) maple vinaigrette (see recipe right)
Directions
Prepare lettuce by ensuring it is washed thoroughly, then place into a large bowl and fill with cold water; this will help crisp up the lettuce. While lettuce crisps up, peel and julienne into a small bowl, then thinly slice cucumber and place into another small dish. Drain bowl of lettuce entirely, add carrots and cucumbers on top along with cranberries and juice of one lime. Dress with your preferred salad dressing and serve!
